National Beef maintains strict raw material quality by primarily sourcing from within our facilities and maintaining strict specifications for all our raw ground beef material.
We ensure a consistent lean content for our Ground Beef program by utilizing a FoodScan™ Meat Analyzer prior to final grinding. In addition, we maintain product integrity by utilizing electroplated equipment and metal detection equipment in strategic locations.
We provide outstanding product consistency by eliminating overworking of raw materials. We also establish better color consistency and particle definition by automating blend times.
Temperature is carefully controlled throughout production. Our process controls assure a product temperature of 36°F or less from processing through delivery.
We use high quality high-speed K-pack systems for chub packaging and a vacuum-seal system for our patties and bricks. We implement strict pressure and sealing requirements for final packaging to deliver prolonged shelf life and consistently sized products.
